Tomato Sauce

I was given a whole lot of tomatoes from my friends veggie garden, I didn’t want them to go to waste so this sauce is an ideal way to cook them and then I can use the sauce in many more dishes in place of tinned..!

 

5kg tomatoes

3 chillies

5 large or 10 small onions

10 garlic cloves

large bunch of oregano

salt

 

Rough chop the tomatoes, dice the onions, crush the garlic, finely chop the chilli, destalk the oregano. Place all ingredients in a large pot or preserving pan. Bring to the boil and then simmer for 4.5 hours. Add salt to taste, I didn’t add to much salt because when using the sauce in other dishes you can add more seasoning then.

i have left my sauce chunky but you can blitz it up for a smoother sauce if you prefer.

place jars in the oven at 120 for 20mins. Fill jars with the sauce screw the lids on tight and allow to cool.
