Whole Egg Mayo

2 free range eggs

1 tbsp Dijon mustard

2 tbsp apple cider vinegar

2 cups oil, I used rice bran

salt to taste

 

Whisk or in a food processer mix the eggs, mustard and vinegar making sure they are well blended before adding the oil. Slowly pour the oil into the egg mix while whisking or whizzing add salt to taste, you will need a decent amount of salt to bring out the flavours.
