I had some left over veg from the Prawn and fish lettuce cups and needed to make a quick easy meal..
left over veg (cherry tom’s, spring onion, capsicum)
6 rashes bacon
1/2 a smoked chicken breast
goat feta to crumble over the top
Grate or blitz in a food processor the cauliflower. Finely dice the onion and bacon.
in a dry pan sauté the bacon and onion, the fat from the bacon is enough to cook with without adding extra oil. Add the cauliflower, fry for 10 mins stirring frequently. Add the left over veg and smoked chicken, cook for a further 5 mins. Season to taste.
Serve with goat feta crumbled on the top
