Bacon, Egg, Spinach, Avocado & Goats Cheese Tarts

IMG_3709.JPGThese wee tarts are perfect for lunch boxes or to keep in the fridge for a quick snack

Makes 6

12 rashes bacon, you can use streaky or shoulder or ham
12 free range eggs
spinach
1/2 avocado
goats cheese or feta
salt and pepper

Preheat oven to 180

Oil a large muffin tin, line each muffin case with the bacon. Place a few spinach leaves in the bottom. Crack 2 eggs into each, season with salt and pepper. Using a small knife break the yolks of the eggs and mix around a bit. Cube the avocado and evenly divide into the each tart, top with a dollop of goats cheese or crumble feta on top.

Bake for 20/25 minutes or until the egg is cooked
