Classic Roast Pumpkin Soup

IMG_3917.JPGWinter is upon us.. What better way to see it in than with this soul warming classic soup

1/2 pumpkin

2 carrots

2 onions

6 garlic cloves

2 ltr vegetable stock

goats feta to top soup

cashew nuts to top soup

Preheat oven to 200

Skin and cube up the pumpkin, place in baking dish with salt, pepper and oil. Roast for 30mins or until cooked through.

Dice the onions, crush the garlic and peel and rough chop the carrots. Place into a large pot, sautéed until the onions are soft. Add the roasted pumpkin and stock. Bring to the boil and simmer until carrots are cooked.

whiz until smooth, top with feta and cashews, serve with your fav bread. Delish
