Winter Salad

Winter Salad-1

Serves 4

½ red onion
8 carrots
4 beetroot
2 tins chickpeas
sml bunch parsley, finely chopped
½ cup sundried tomato
100g green olives

Spiced Roasted Peas
2 cups peas
2 tbsp olive oil
2 tsp smoked paprika
2 tsp cumin
1 tsp salt

Dressing
1 lemon, zest & juice
6 tbsp tahini
1 tbsp balsamic
1 cup olive oil
1 tsp salt

Preheat the oven to 200°C

Peel and dice the beetroot, red onion and carrots and place in a large roasting tray. Drain and rinse the chickpeas and add to the vegetables. Season with salt and pepper and drizzle with olive oil. Toss the mixture. Roast in the oven for 40-50 mins or until roasted.

Spiced Roasted Peas
If you are using frozen peas defrost and dry them. Toss them in the smoked paprika, cumin, salt and olive oil, place in oven and roast for 30mins

Dressing
Place all ingredients into a food processer or smoothie maker and blitz

To assemble the salad, mix all components together including the parsley, sundried tomatoes and olives and serve.
