Chocolate & Walnut Banana Muffins

Makes 18 mini muffins

Dry ingredients
1 cup banana flour
¾ cup wholemeal oat flour
2 tbsp cocoa
2 tsp ground chia seeds
2 tsp baking powder
½ tsp baking soda
1 tsp cinnamon
1/8 tsp salt
100g dark chocolate, grated
¼ cup walnuts, chopped

Wet Ingredients
2 eggs
¾ cup raw sugar
½ cup coconut oil, melted
3 overripe bananas

Preheat oven to 180°. Grease mini muffin trays and set aside
Combine all dry ingredients in a mixing bowl. Set aside.

In a separate bowl mash the bananas, whisk in the eggs, sugar and oil. Pour into the dry ingredients and fold in until just mixed. Spoon into the muffin trays and bake for 15-20mins.
