Immune Boosting Chicken Noodle Soup

Broth

1 chicken carcass and 200g wings
1 onion, rough diced
6 garlic gloves, crushed
4 carrots, rough diced
80g fresh turmeric, sliced
80g fresh ginger, sliced

Place all ingredients into a large pot, cover with water. Bring to the boil then gently simmer for about 4hrs.
Stain the liquid and return to the heat, season with salt, I added about 3 teaspoons.
Strip the meat off the bones and reserve.

To Serve
½ Savoy cabbage, finely sliced
1 broccoli head, cut into small florets
1 green chilli, finely chopped
1 packet vermicelli noodles, cook according to packet instructions

In a large fry pan heat 2 tbsp oil, add the cabbage, broccoli and chilli. Pan fry for 6/7 mins until the veg is heated though but the broccoli is still crunchy.

Share the noodles amongst the bowls, ladle the broth over and top with the veg and chicken.
