Banana Pancakes

Serves 4 – gluten free, dairy free

4 ripe bananas
8 free range eggs
1tsp cinnamon

Coconut yogurt

Mash the bananas. In a separate bowl lightly beat the eggs. Mix into the bananas with the cinnamon.

Heat a large fry pan or cook on the flat plate of your bbq.

Using either butter or coconut oil, melt in the pan or on the bbq plate. Once hot to a fairly high temperature, using a small ladle, pour a ladle full of the batter onto the pan or bbq plate. You will probably only be able to cook 4 to 6 at a time. Once little bubbles start to appear in the Pancakes flip over and cook the other side for a couple more minutes.

Top with your favourite toppings, we had fresh berries and coconut yogurt.

Garnish with edible flowers.
