Mexican Night

Salsa

1 red capsicum, finely diced
1 punnet cherry tomatoes, diced
1 bunch spring onion, finely sliced
1 sml bunch coriander
hot sauce, I used kiwifruit habanero
1 lime, juiced

Mix together all ingredients, add as much or as little hot sauce to your taste.

Guacamole

2 ripe avocados, lightly mashed with a fork
1 lemon, juiced
hot sauce, I used kiwifruit habanero
2 tbsp sweet chilli

Mix all ingredients together, adding as much or a little hot sauce to your taste.

Mexican Spiced Mince

500g beef mince
1 onion, finely diced
4 cloves garlic, crushed
2 tins, chopped tomatoes or tinned cherry tomatoes
1 tin refried beans
1 tbsp cumin
1 tbsp coriander
1 tbsp smoked paprika
salt and pepper to season

Sautee the onion and garlic until onion softens. Add the mince and brown off. Add the tinned tomatoes, spices and salt. Simmer for 10mins. Add the refried beans, simmer for another 20mins. Taste and season to taste.

Perfect for burritos, tacos or nachos. Just add some grated cheese and fresh leaves!
