Raw Cauliflower Salad

1 small head cauliflower or half large head, grated or whizzed in a food processor
2 punnets cherry tomatoes, halved
1 yellow Capsicum, finely diced
1 bunch spring onion, finely sliced
1 small bunch parsley, finely chopped
1 small bunch mint, finely chopped
1/2 cup pumpkin seeds
1/2 cup sunflower seeds
1/2 cup cashew nuts

DF Pesto
1/2 Cup toasted Cashews
1 red capsicums roasted
1/2 cup sundried tomatoes
sml bunch oregano
sml bunch mint
sml bunch parsley
2 tbsp savory yeast
1 tbsp red wine vinegar
3 garlic cloves
1/2 cup of olive oil or until you have a nice consistency
salt to taste (about 2 tsp)

Place all Pesto ingredients (except olive oil) into a food processor. Blend while slowly pouring in olive oil until you have a nice consistency. Season to taste.

Combine all ingredients together. Serve
