Chocolate Chip & Cherry Biscuits

Makes roughly 24

250g coconut softened
1 ½ cup sugar
2 eggs
2 cups almond meal
1 cup rice flour
1 cup chickpea flour
3 tsp baking powder
2 cups glace cherries
1 cup chocolate chips

Pre heat the oven to 180°

Cream the coconut oil and sugar together, until fluffy. Add the eggs and beat until well combined.
Mix together the dry ingredients, add to the creamed mixture. Mix until well combined. Mix in the glace cherries and chocolate chips.
Roll into walnut sized balls and press down on them with a fork.
Bake for 15-20mins

Cool & Serve
