1 block feta, I used goat feta
3/4 cup chickpea flour
1/2 cup coconut cream
1/4 cup sweet chilli
Salt and pepper to taste
Peel and de-seed the pumpkin, grate. Peel and grate the Parsnip. Place all ingredients into a bowl and mix until well combined and mixture is sticky.
Heat a large fry pan to a medium heat, use a good vegetable oil to cook Fritters in. Spoon the batter into the pan cook for 10mins on each side.
Delicious Served with fresh spinach and a poached egg.
