Baked Avocado with Smoked Salmon

1 punnet cherry toms, cut into different sizes and shapes
3 spring onions, finely sliced
2 red capsicums, finely diced
Small bunch basil, leaves torn
¼ cup olive oil
½ cup sweet chilli sauce
2 limes, juiced
Dash of tabasco, add to your taste

Combine all ingredients, set aside

Baked Avocado
Preheat oven to 200C

4 small or 2 large avocado’s, cut in half and stones removed
1 egg for each half avocado
Medium bunch rocket
½ block Goat feta, crumbled
200g sliced cold smoked salmon

Crack the egg straight into the stone hollow. Bake in the oven for 15mins or until eggs are cooked but yolks are still runny.

To serve place rocket on plate, top with avocado, salsa, salmon and crumble the feta over the top.
