This recipe is a great one for the freezer. I will often make a big batch, freeze the uncooked falafel balls and then pull out of the when I need them.

  • Tip. When freezing place the balls on a tray and freeze then place into a bag or container.

2 cups dried chickpeas, soaked overnight

1 onion, diced

4 cloves garlic

Small bunch parsley

Small bunch mint

Small bunch oregano

1/2 cup chickpea flour

3 tsp salt

2 tsp ground cumin

1 tsp ground coriander

1 tsp pepper

1/4 tsp cayenne

Place all ingredients into a food processor and whiz until mixture is sticky. Roll into balls.

To Bake place on baking paper and drizzle with olive oil bake for 30-40mins @ 200°C
