Sunflower Gluten Free Vegan Bread

Makes 2 loaves

2 cups hot water
2 cups cold water
4 tsp sugar or honey
7 tsp yeast

Dissolve the sugar in the hot water, add the cold water and yeast, whisk. Set aside until yeast is activated and frothy.

2 3/4 cup almond meal
2 cup buckwheat flour
3/4 cup potato flour
2 cup sunflower kernels
3 tsp salt
4 tbsp physillum husk
2 tbsp savoury yeast
1 cup ground linseed/flaxseed

Pre heat the oven to 80ºC.
Combine dry ingredients, add yeast mixture. Mix until well combined. Pour into 2 loaf tins. Top with pumpkin kernels and poppy seeds.
Bake @ 80ºC for 20mins to rise.
Turn oven up to 200ºC for 30mins or until cooked tap the top of the loaf and if it sounds hollow its ready.
